THIS week's recipes are dishes I hanker for after summer holidays - I love trying to recreate dishes I had while away. At the moment we have a Moroccan-style curry with couscous on the menu at Hadskis, my restaurant in Belfast's Cathedral Quarter. This was my favourite dish in a Spanish/ Italian restaurant on a previous getaway.
This year I was in Italy and the Italians have very simple, delicious desserts - you don't even have to have a sweet tooth to enjoy them.
Polenta cake, when cooked well, is delicious.
I make this one with yoghurt and it's a very simple recipe to try. The custard and cherry tart is another easy recipe - once again from my favourite Spanish/Italian restaurant on holiday.
For lunch, most days I had the best caprese salads, with the freshest mozzarella or in some cases with Burrata. This is the creamiest, most delicious cheese - unsurprisingly as it's made from mozzarella and cream. As always, it is best to pair great ingredients with simple recipes.
