Video: Irish Rarebit recipe

To mark National Bread Week (September 11 - 15) why not try this delicious recipe for Irish Rarebit.

Preparation: 10 minutes + cooling


Cook: 3 minutes


Serves 4

15g butter


200g mature Irish Cheddar cheese, grated


1 tbsp plain flour


1 tsp wholegrain mustard


4 tbsp Guinness


1 tbsp chopped parsley + extra for serving


4 slices white batch bread

Place the butter, cheese, flour, mustard and Guinness in a small saucepan and heat gently, stirring until melted. Cook for 1-2 minutes, stirring until thickened.

Season with black pepper and allow to cool before stirring in the parsley.

Toast one side of the bread and spread the untoasted side with the rarebit. Place under a preheated grill for 2-2½ minutes until golden.

Sprinkle with extra parsley to serve.

  • Try adding a dash of Worcestershire sauce to the mix for extra flavour.
