Easy Peasy Recipe - Sweet Pea and Tuna Salad

This week's Easy Peasy Recipe is sweet pea and tuna salad.

You will need:

400g short pasta, such as shells

225g frozen peas, thawed

1 stalk celery, chopped

1/2 red onion, chopped

Roughly chopped fresh flat-leaf parsley

2 160g cans tuna, drained

75 mls olive oil

50mls red wine vinegar

1/2 teaspoon dijon mustard

salt and black pepper

To make:

Cook the pasta according to the package directions.

Drain and rinse under cold running water.

In a large bowl, combine the pasta, peas, celery, onion, parsley, and tuna.

In a small bowl, whisk together the oil, vinegar, mustard, salt andpepper.

Pour the dressing over the salad and gently toss.

Serve at room temperature or chilled.
