BANK holidays are made for barbeque food. If you are thinking of rustling up a storm on the barbie this weekend, these recipes are great additions alongside all the classic dishes like burgers, steaks and wings.

These dishes are bursting with flavour without being too overbearing or filling, so they won't take away from your main meal. The wings are a personal favourite of mine though, perfectly paired with a beer.

The best thing about these is that they can both be made in the kitchen, so if the weather doesn't hold up this weekend you can still have your delicious BBQ spread, hassle free.

:: BBQ Beef Ribs (Serves 3)

Ingredients:

1 rack of beef ribs (ask your butcher to slice into individual portions, allowing 3 per person)

1 onion, diced

2 cloves of garlic, crushed

2 chilis, deseeded and diced (add more if you like it hot)

5 sprigs of thyme

2 bay leaves

1 tsp fennel seeds

1 pinch cumin

1 tsp paprika

1 tsp Worcester sauce

1.5 tsp Dijon mustard

150g brown sugar

150ml apple juice

200ml tomato ketchup

100ml HP Sauce

1 tsp sea salt

1 clove

Zest of 1 orange

Method:

To start, set the ribs in a large pot of salted water and bring to the boil. Once boiled, simmer for 60-70 minutes, until cooked. Remove from the water and leave to the side. Next, place all your ingredients in a large pot on a low to medium heat and simmer for up to 50 minutes or until the juice has evaporated. Leave to cool and blend thoroughly. Once cooled, coat the ribs in the marinade and cover in cling film and place in the fridge overnight. You can make the marinade and store in an airtight container and refrigerate for up to 14 days.

:: Sesame and Soy Chicken Wings (Serves 4)

1 tbsp rice vinegar

4 tbsp hoisin sauce

½ inch fresh ginger, grated

2 cloves garlic, crushed

1 tbsp soy sauce

2 tbsp honey

2 tbsp sesame seeds

20 chicken wings

Method:

Start by combining all the ingredients excluding the chicken into a bowl and mix thoroughly. Season the chicken wings with salt and pepper, place in a baking tray, then pour the mixture over the chicken and mix well. Cover in clingfilm and place in the fridge to rest overnight. When ready to cook, pre heat the oven to 190C and remove the cling film from the baking tray.

Place the dish in the oven and cook for 40 minutes, make sure to turn the chicken after 20 minutes. Then serve as a delicious starter or side dish.
