Easy Peasy Recipe: Berry Yogurt Parfait.

This week's Easy Peasy Recipe is berry yogurt parfait.

You will need:

500 g (1 lb 2 oz) fresh berries or 275 g (10 oz) frozen berries

1/2 teaspoon ground cloves

1/2 teaspoon ground cinnamon

500 g (1 lb 2 oz) plain yogurt, preferably low-fat

1 teaspoon vanilla extract

2 tablespoons maple syrup or organic honey

To make:

In a small saucepan, warm the berries, adding a little water as needed to prevent burning.

Simmer for 1 to 2 minutes.

Add the cloves and cinnamon and continue to simmer until the berries begin to soften, cool slightly.

If the berries produce too much liquid, spoon them into the bowl with a slotted spoon.

Add the yoghurt and vanilla and mix well.

Sweeten to taste with maple syrup.

Serve with granola or porridge for breakfast or enjoy as a light dessert or snack.
