Trendy summer cocktails to help you stay cool in the heat

IT might be news to you but sherry is making a comeback and has been become the cultish drink of affection for the last few years. Bartenders have been recognising the singularly diverse power of the fortified wine when poured into a mixing glass.

Made from Spanish grapes, a lone glass of sherry is an invigorating way to cleanse the palate before a meal or wind down after one. There are so many styles of sherry produced that its applications are near-endless and one reason sherry plays so nicely in cocktails.

However, you don't need to be a sherry aficionado to appreciate the great taste of Tio Pepe Fino Sherry (£9, 75cl, www.sainsburys.co.uk) when it's mixed with lemonade, mint and lemon slices. A dry style of sherry that cries out for salted almonds and a bowl of olives, here's the recipe for anyone wanting to try something different in the good weather.

THE TIOJITO

200ml Tio Pepe (pre-chilled), 400ml lemonade, a handful of mint, 4 lemon slices, bags of ice cubes

Half-fill a pitcher with ice. Add the muddled mint and fino sherry. Top up with lemonade and garnish with lemon slices. If that doesn't tempt you and you still want something different here's another cocktail for summer afternoons and balmy evenings, Ciroc (a French vodka made from grapes) have incorporated tropical fruit into Ciroc Pineapple Vodka (£34.83, 70cl, www.amazon.co.uk) and this sunlit infusion is a real crowd pleaser that balances freshness with sweetness.

CIROC SUMMER PUNCH

35ml Ciroc Pineapple, 15ml Chambord, 50ml pineapple juice, 10ml vanilla syrup, ice cubes. Half fill a cocktail shaker with ice. Add the ingredients and shake vigorously. Strain into a glass with cubed ice and garnish with a pineapple leaf. Enjoy.

Wine of the Week

Hardy's William Hardy Shiraz, was £9.98, now £6, Asda.

This wine is a deep, rich mulberry hue in the glass with wonderful aromas of autumn fruits – lots of blackberry, blueberry and dark plums – followed by oak and vanilla. The first sip did not disappoint – it simply bursts with fruit and the smooth silky tannins and vibrant acidity give it a good structure. A great red for the price.
