Great Belfast bake-off

THE recent James Street South Cookery School Bakery Competition attracted entries from across the north, showcasing the best local ingredients and a wealth of talent and proving that home baking is very much alive and well here. The standard of entries was world-class but three recipes really stood out for our judging panel.

Our winner, Naomi Hipson, created a perfect carrot cake which wowed the judges with its taste, texture and presentation.

Naomi's cake will now be reproduced by Irwin's bakery and sold in selected Spar stores.

The cake has also appeared on the menu at the James Street South Bar & Grill to celebrate Restaurant Week.

Sharon Duffin's mouthwatering chocolate cake, made with Guinness and locally sourced beetroot and is a real tea-time treat while Erin Clarke's Kale and Dulse Loaf is a super-food alternative to our traditional wheaten.

Here are their delicious recipes for you to try yourself.
