Baked Fish with chips

(Serves 6)

For the chips:

2 tbsp olive oil 1kg potatoes, skin on but cleaned and cut into chips 1 onion, fine dice 6 cloves garlic, fine dice or grated

For the fish:

800g of salmon, (you can use haddock fillets or cod loins too) with skin on juice of 1 lemon Start by pre heating the oven at 190degC. Add the oil to the roasting tray and add in the chips and mix with onion and garlic. Mix thoroughly and place in oven for 30 minutes turning over at the 15 minute mark. Squeeze the lemon over the fish fillets and place on top of the chips at the 30 minute mark and cook for 10 minutes until you see the fish has cooked through. You can garnish with a selection of herbs (parsley, dill or coriander) and season with salt and pepper and serve.
