Recipes for a better you in winter time

WHAT we eat has a profound effect on our physical and emotional wellbeing - in other words, you are what you eat.

That's why my recipes this week make the most of the goodness in their ingredients and use cooking methods that maximise the vitality and energy that good food can offer us.

On these damp, cold and grey days there is nothing more cheery than brightly coloured delicious food packed full of goodness - it'll make you feel great from the inside out.

This springtime chicken is one of my favourite recipes and it's made with freshest and best of ingredients - low fat, tasty and flavoured with spices and the sweet flavour of tomatoes.

Those of you still aiming to keep the calorie count down will be safe with this dish.

The slightly bitter taste of saffron helps to balance the dish and also gives it its intense colour.

I'm also sharing two delicious smoothie recipes.

Whether made with fruit or vegetables, yoghurt or juice, I love smoothies as they're quick and easy to make and are full of vitamins to help ward off colds. Buy fruit and veg that's in season for the optimum feel-good factor.

I like to pour mine over muesli or breakfast cereal as an alternative to milk.
