A feel-good lunch

With a stack of books and TV series under her apron, Jenny Bristow has been synonymous with good food for many years in Northern Ireland. Today she introduces a new series of recipes to readers of The Irish News

I'M CONSCIOUS of the fact that, these days, people are struggling to find time and funds to take good care of their minds and bodies. Life is tricky; our lives are filled with hurry and worry. The endless demands of work and family can leave us feeling there is just no more fuel left in the tank.

In my own small way, I want to encourage people to fight back against the deadlines by making manageable, simple changes through good, low-cost food, that might just deliver an energy boost to the mind as well as the body. Because, make no mistake, the connection between eating well and being well couldn't be more clear. As it's January I'm going to kick off my collection of recipes for The Irish news with a delicious and simple soup and sandwich combo sure to keep the chill out. Roasted yellow pepper soup with basil cream is a dramatic, colourful Mediterranean soup that's ideal if you're watching your weight. The vegetables full of flavour and packed with vitamins. Peppers are terrifically high in vitamin C and known to not only help boost the immune system but help maintain both a healthy heart and urinary tract.

My cheesy brushetta is a rustic cheese sandwich that goes well with a tomato and pear relish and teams up perfectly with this particular soup.
