Easy Peasy recipe

This week's Easy Peasy Recipe is Salted Caramel Brownies.

You will need: 2 x 100g bars dark chocolate 100g soft salted butter 250g caster sugar 4 large beaten eggs 1tsp vanilla essence 60g plain flour 60g cocoa powder For the salted caramel 150ml double cream 100g sugar 30g salted butter Pinch of salt To make: Preheat oven to 180°C/

Gas Mark 4. Break up the dark chocolate and melt in microwave or in a bowl over a low heat. Leave to cool in a bowl, mix the butter and sugar until fluffy. Add eggs and vanilla essence. Spoon the melted chocolate into the mixture and mix together. Sift in the flour and cocoa and stir. Pour mixture into a baking tin and spread even. Bake for around 20 mins until firm to the touch.

To make the salted caramel: Place the double cream, sugar and butter in a pan and heat over a low heat until butter is melted and sugar is dissolved. Bring to the boil and simmer until thickened and smooth.

Add a large pinch of salt. Leave to cool. Spread a thick layer of the caramel over the cooled brownies in the baking tin.

Place baking tin in fridge to set. Remove and cut into squares. Place back into fridge to set completely.
